THESE ARE DELICIOUS! I seriously can't get enough of them and they are easy beyond easy. I made these for my dad on Father's Day and wrote a cute note that said "I love you S'more everyday." He loved them and so did my whole family!
Ingredients
- Your choice of brownie mix
- Your size of marshmallows
- 2 1/2 cups of graham crackers
- 1/4 cup sugar
- 10 TBS of melted butter
- Caramel Syrup (optional)
Directions
- Preheat oven to 350 F
- Crush graham crackers into very fine crumbs
- Add graham crackers, butter and sugar together
- Press graham cracker mixture into bottom of cupcake liners
- Make brownie mix as directed on back of box.
- Add brownie mix to cupcake tin on top of graham cracker mixture.
- Cook for 18 to 20 mins
- Once brownies are done, remove from oven and add marshmallows on top.
- Turn oven to broil and place in oven and watch marshmallows very carefully until they turn light brown or desired color.
- Add caramel syrup
- Served best when warm!

The seasons are changing and it's time to spice up the summer season with some festive fruit cupcakes! I plan on trying some orange dream cupcakes next! However, these strawberry cupcakes are delicious! I wasn't a huge fan of the frosting so next time I make them I will find a different recipe but these were great! I found this recipe on My Baking Addiction. If you haven't been to this site yet, do it! It's wonderful!
Ingredients
Cupcakes
- 1 package of vanilla cake mix
- 1/2 package of instant vanilla pudding (small package)
- 1 cup of Greek strawberry yogurt
- 3/4 cup vegetable oil
- 1/2 cup water
- 2 tsp. vanilla extract
- 1 cup fresh diced strawberries
Frosting
- 2 cups of butter
- 5 - 5 1/2 cups of powdered sugar
- 2 tsp vanilla extract
- 5 TBS of pureed strawberries
Directions
- Preheat oven to 350 and use liners in muffin tin.
- In bowl, mix all cupcake ingredients together thoroughly except strawberries.
- Fold in strawberries to mixture
- Add mix to muffin tin till each is about 2/3 full
- Bake for about 18-20 mins or until toothpick comes out clean
- Allow to cool.
Frosting
- Beat the butter for several minutes until light and fluffy.
- Slowly add powdered sugar, allowing powdered sugar to completely incorporate until adding more powdered sugar.
- Add vanilla and mix
- Slowly add strawberry puree checking for desired taste as you add more.
- Mix frosting until light and fluffy.
- Add chocolate dipped strawberry on top. I used white chocolate and chocolate dipped strawberries.
